Beef Noodle Bowl - No picture necessary - Per Sistah!

So I came home on Thursday to a very pleasant surprise. My SISTAH! She walked her niece and made herself some sandwiches. With Lettuce! Now here is the thing about my sister...she comes over because being 22, she doesnt cook that often. She mostly eats take out. Remember when you were in college and all you wanted was your mom's home cooked food? Well she comes to my house...(even though she is a college graduate and in the real world.)

Now that I am back on my blogging kick, I gave her some options of what I was cooking. We settled on the Beef Noodle Bowl. I personally always enjoy chinese food or ethnic flavors. This recipe called for some things I never cooked with before - red chile paste, fish sauce...but good ol' trusty ACME carried them both. The thing about my family is that we all have sensitive stomaches. My grandmom enjoys anything plain...basically restaurants need to make childrens menus as follows, "For children 12 and under and Adults 65+" My mom always gets ill from chinese food. I guess only my dad and I are alike. My dad has eaten things that no one could even imagine. But, that's my dad!

Anyway, after being at work for 9 hours, commuting an hour each way, do I want to come home and cook a 6 course meal for Greg and Kate, (as Greg would say...) Yes and No! Yes I love cooking so of course any opportunity, why not, and NO because I am so tired when I get home. I was on the phone with my mom for my routine on my way home from work chat and told her "Mom, I am cooking beef noodle bowls tonight for us..." Her reaction.."UCK." So this whole dinner is really starting off well...Whatever, you hungry? You eat!

So I started with some red chile paste and olive oil. Added sliced flank steak. While that was cooking, I took so red peppers, garlic, onions, brocoli, mushrooms and ginger and chopped them up. I added EVOO to the pan, threw all the veggies together and then finally added everything together once the beef was complete. I then added fish sauce, S & P and chicken stock. Brought it to a boil and then turned the heat lower and let it summer. I cooked some whole wheat pasta and once that was cooked to al dente, tossed everything together. I added some lemon zest, juice of a lemon, basil and scallions continued to toss. VOILA!

So, I enjoyed it. Not too spicy (Greg isnt a fan of HOT!!) and not too heavy or too much meat (My sister isnt a huge beef person and neither am I.) Greg enjoyed it. He eats everything I make. He doesnt even bat an eye. He just eats. My sister, picked at it like it just served her raw pork belly. She rocked her fork back and forth a couple of times and then said..."It was good, I'm full." B.S.!!!!!! Well, needless to say about an hour later she was making a turkey sandwich and snacking on tomato and mozzarella. Oh well! You can't win them all. Or Can You? The way I look at it...for every thing I cook, to get one rotten meal, per Sistah, I'm a pretty good Chef...Right? Real world translation...For everything that we all do in life, to only do 1 thing bad, or a few things for that matter, we should be proud.

Conclusion: I'm Proud!

Next post...Spinach and Artichoke Stuffed Shells...
(Sorry sistah, you shoulda come over on Friday.)

Time to Catch Up...Chicken Pesto Presto

Ever do nothing...just absolutely nothing you know you should be doing? Prime example....me laying on the couch with my monkey (Vixen) watching Lifetime Movie Network and ignoring the pile of laundry, the empty pantry and the dust collecting on the the furniture...The next day I have to play catch up...cleaning, errands, the norm...Well, it's time for me to do just that...Catch up! Basically, I am going to post a bunch at once! Chicken Pesto Presto - cute name huh? (Thanks RR) This is a really yummy meal and so easy and quite healthy. It reminds me of the chicken my mom always gets at our favorite family restaurant, Arpeggio. So start with chicken breasts. Butterfly them so they look like you are opening a book. Sprinkle with S&P. Put a pot of water to boil on the stove. Add salt. In a food processor combine basil, garlic, parm cheese, S&P, garlic and some lemon zest. Steam in some EVOO. Voila - you made a pesto, minus the pine nuts. For me, they were too ...

The Introduction

So, have you ever thought that you were destined to do something and from the time you were little you knew it? Think of some famous singers and actors like Mariah Carey and Dakota Fanning (despite only being a teen now)...don't you think that by singing, dancing and/or acting at such a young age made it inevitable that they would become famous? I think that most people in the world fall into their destiny. With the normal facets of life, people gravitate towards what is comfortable via consistency around them, family, friends, etc. When I was barely old enough to talk, my mom decided it was time for me to learn how to go around the room and address everyone by name. Well to the normal 1 year old that would be mom, dad, Lindsay, etc. I went around the room and said "Ma-Ma, Da-Da," and pointed to myself and said, "Ra-Ra." Being that my name is Lindsay I am sure my parents wondered (and we are all still wondering) where I came up with and why I called myself ...

Get Him To The Greek...

It's GYRO Time! Do you say it HEERO, or J-IRO or GUY-RO? Who knows...I honestly have never made a gyro before. I can remember back to when I was in college and my roomies and I would go to the Owl's Nest at 3am after a night of, let's say being a College Freshman and getting the Gyro Platter. It was so delish! The tzaziki sauce made it! I can also think back to going to South Street Slouvaki on South Street (when it was open) and munching on a yummy gyro! So, while I was menu planning today, I decided, why not try it out. So, we all know that the traditional gyro is made with Lamb. No thanks. So, since I am not a big red meat eater, mine was made with chicken and Greg's was made with steak. The marinade - take some garlic, EVOO, balsamic, beef stock/broth, thyme, parsley, shallot, lemon juice and lemon zest. Add the steak and chicken OR whatever you are using. Believe me, I am on a budget, so whatever steak is a good price, I grab. In this case, it wa...
